Weekly Menu Plan {17 February}


Happy President's Day (USA) and Family Day (Canada)! I hope everyone has had a lovely day off work and school and regular schedules. 

Here is what I am planning for our suppers this week:

Monday - Leftovers

Tuesday - Chicken Pot Pie, salad

Wednesday - Taco Soup

Thursday - Asian Chicken Wraps

Friday - Cheese Enchiladas, black bean and corn salsa 

Saturday - Leftovers

Sunday - Snack-y supper

  1. You have some lovely dinners planned! We're also having wraps of some sort this upcoming week, and something with black beans, but I'm not sure what. Yum!

  4. Some great meals there. The taco soup sounds awesome. What are Asian Chicken Wraps?

    1. Tamara, you can use whatever chicken you have handy (grilled, rotisserie, etc.). I had chicken tenderloin strips that I marinated in soy sauce with a tiny bit of rice wine vinegar. I cooked the chicken in a skillet until no longer pink in the middle. In the meantime, I julienned carrots, green pepper and romaine lettuce (you could also use Napa cabbage) and set aside. I made a quick Asian sauce using hoisin sauce, chili sauce, soy sauce and a little warm water. On a flour tortilla, layer chicken strips and veggies and drizzle with the sauce. Roll up and enjoy. Yum!

  5. Love your menu! Full of variety; I should be better about making one as we often get stuck in Chicken and/ or Pasta rut!

  6. I love menu planning. It is such a huge help. We ended up eating taco leftovers last night since I was too tired to make our planned dinner last night.

  7. That looks great-with great variety. I love making chicken pot pie -definitely a staple in our home. :-) Love meal planning to - saving so much time, energy and MONEY!

  10. I love menu planning! I've found that not only do I not panic each day trying to figure out what we're going to eat, but I save money because I only buy what we need. Usually I do mine on Saturday, but I was out of town at my son's soccer games all day yesterday, so I really need to do it today.
