Weekly Menu Plan {10 March}



Hello lovely friends! How are you this week? We had a busy and wonderful weekend with several friends. I love opening our home to friends and providing a safe and relaxing haven for them. What marvelous relationships and memories we can create by opening up our homes. It truly is a special gift.

The next couple of days we are suppose to experience very spring-like temperatures (60-66 F./15-18 C.). And then possible snow. I think the time change tricks us into thinking that it's spring. But that is still another week and a half away. And who says it can't snow in spring? (Remember, we used to live in Canada, where it often did snow in spring.) We're celebrating a birthday this week, so it's an extra-exciting week for us!

Here's the plan:

Monday - Beef Stroganoff, pasta, green peas, salad (I made the Stroganoff from leftover roast and gravy from last week!)

Tuesday - Real Simple Cassoulet (from a wonderful book I am reading - more about that tomorrow)

Wednesday - Out to eat for a birthday dinner (possibly!)

Thursday - Pumpkin soup, crusty bread

Friday -  Beef Fajitas, Spanish rice, chips, guacamole

Saturday - Snack-y supper

Sunday - Grilled chicken, Greek couscous, salad
