Weekly Menu Plan {9 February}


Hello and happy Monday to you! How was your weekend?

We were busy with cleaning the house, plus work for Emma. Bob went down to Charlottesville to attend the memorial service for his precious great aunt. I'm so thankful he was able to do so and spend time with extended family. We had a new friend over to hang out and have supper with us Saturday evening, which was lovely. Yesterday was busy with church and then we went on a family hike. It's been a long time since all seven of us were able to go together. The place where the kids and I have been going hiking lately is an old golf course which has been turned into a conservation area. It's right along the Shenandoah River, and we are thrilled to have discovered it! Here are a few photos from the afternoon.




Here is our menu plan for this week:

Monday - BBQ Chicken in the crock pot, mashed potatoes, salad     {This is so easy! Slice 1-2 onions and place in bottom of crock pot. Place 4-6 chicken breasts on top of onions. Pour one bottle of your favourite BBQ sauce (or the equivalent amount of homemade sauce) on top of chicken. Turn crock pot on low. Cook 6 hours or until chicken is thoroughly cooked and falling apart. Shred with two forks. Serve with extra BBQ sauce. I usually serve this on buns, but decided to change it up a bit for tonight.}

Tuesday - Corn chowder

Wednesday - Homemade Vegetable Soup (Ben's night to cook)

Thursday - Chicken Pot Pie (Emma's night to cook)

Friday -  TBD (Maya's night to cook)

Saturday - BBQ Beef, potato casserole, green beans (Austin's night to cook)

Sunday - Snack-y supper
